Gluten-free & Paleo Meals From Week 1 of New Eating Plan

  This past week and a half has been a little different from the normal routine around here. As you probably know, we started a new way of eating and I have to admit, I was a little worried that is was going to be a major challenge. Surprisingly, it has been going pretty well. This new "diet" is very similar to the Paleo diet. Here are the restrictions in case you missed them: NO gluten, grains, rice, flour of any kind, dairy or corn syrup. Basically what we can now eat is veggies/fruits, meats, and nuts. Everything has to be organic and processed minimally. 
  Last week, I discovered a local organic farm just a few miles up the road! They delivery a large "box" of fresh produce weekly for only $20 a week! I am working on another post with all the details! This has helped SO much!


  Here is some of the meals we had the first week on this plan. These are pretty basic and easy. I will definitely be adding a little more pizazz to the meals in the future, but these were very good and stayed within the eating guidelines. 


Breakfast:
Meal 1:
Sausage & Egg Frittata (all natural & organic)


Meal 2:
Organic Eggs, sausage patties, Apple with Peanut Butter

Meal 3: 
Bacon and Eggs

Lunch & Supper:

Meal 1:
Hamburger Patty with organic ketchup (I combined organic minced garlic &          cilantro with the meat)
Organic Broccoli
Organic Green Beans

Meal 2:
Beef Patties
Organic Green Beans
Baked potato

Meal 3:
Hebrew National Hot Dog (no bun) with organic ketchup
Organic corn
gluten-free, organic potato chips (I did not like these, will try a different brand next time)

Meal 4:
Organic Chili 

Meal 5:
Beef Patty 
Baked Potato with salsa
Honey roasted carrots (I will share recipe soon. These were SO good!)


Meal 6:
Hamburger Steak
Roasted Eggplant

Meal 7:
Chicken thighs (cooked in crock pot)
collard greens
sweet potatoes sauteed with apples and onions in honey and butter

Meal 8:
Chicken Breast
Turnip greens
Pinto Beans


Meal 9:
Hebrew Nation Hot Dog (without bun)
Sweet potato fries

Snacks:
Organic Apples with peanut butter
Organic Dark Chocolate
Toasted Pecans



  Now that I am becoming more familiar with the plan, I will have a better idea of what to pick up when I make my bi-monthly trip to Kroger (the closest grocery store that sells organic food). Since starting this new plan, I am already starting to feel healthier. Hopefully, Jeff can see some results soon. I am still looking for ways to add more calories so he doesn't lose weight. Many of you have requested that I share our meals with you along the way and I hope this has been helpful to you. I will keep you posted on any new meal ideas and recipes I discover!

  2. I'm glad to hear that things are going so well on your new diet. To be honest, your meals sound so delicious, and I wish I lived closer so I could sample your menu ;-)

  3. Way to go Crystal...you are doing a great job with your meal planning. Those menus sound awesome! So glad to see that you were able to tell a difference in the way you feel already and hopefully Jeff will also in the near future.

  4. So glad this has worked out for you. I was wondering how you two were doing. That farm is a major blessing, huh? I live in CT and got hit terribly hard by Storm Alfred. Our power went out Sat. at about 2:30, Just got back at 4:15 today!! I've been in withdrawal from my friends online.
