Buffalo Chicken Finger Sandwiches~ Awesome and EASY!


Between going to work, picking up the kids from ball practice, helping with homework, and so on, and so on, it isn't always possible to prepare a large, seven course dinner. In the fast-paced world that we live in, this just isn't always realistic. This quick, easy dinner recipe is definitely one that is sure to please even the pickiest  is a great alternative to fast food when you don't have a lot of time to cook! We have these all the time around here and I just had to share this great sandwich with ya'll!

This is what you need:
  • Chicken Fingers
  • Buffalo/Chicken Wing Sauce
  • butter or margarine
  • cabbage
  • sliced American or Cheddar cheese
  • hamburger buns, I usually prefer the Sara Lee Soft and Smooth Wheat buns, but we are expecting snow here in Alabama, so I had to take what the grocery store had left tonight :)

Just cook the chicken fingers as directed. While they are cooking, pour some of your buffalo sauce into a microwave-safe bowl. I used about 3/4 cup. Now, add butter to the buffalo sauce. The amount is according to how hot or mild you like it. I used about 3 Tablespoons. Cover and heat in the microwave to melt the butter. Stir.

Now rinse and slice you cabbage. At this point your chicken should be done.
You can either dip your chicken in the buffalo sauce/butter mixture or brush the sauce on your chicken with a pastry brush.

Place your chicken on your bun and add cheese. Add cabbage and your sandwich is complete! The cabbage seems to add a little crunch and take away some of the heat.
